		<description><![CDATA[Nightmares and night terrors are common occurrences during the toddler, pre-school and early elementary years.]]></description>
			<content:encoded><![CDATA[<p>I have been receiving a few emails about the difference between nightmares and night terrors. First off, nightmares and night terrors are common occurrences during the toddler, pre-school and early elementary years.<span id="more-2330"></span></p>
<p>Nightmares are scary dreams that occur during REM sleep (which occurs towards the end of sleep when REM sleep is most intense) and dreams are vivid. A child awakens after a nightmare being scared, anxious and afraid to go back to bed.</p>
<p>Night terrors on the other hand occur during the first few hours after a child falls asleep, when non-REM sleep is the deepest. During a night terror your child may cry out, have dilated pupils, an increased heart rate, sweating and heavy breathing. They appear to be awake but in reality are only partially aroused and will have no memory of the event.</p>
<p>During a night terror a child will not recognize you or allow you to comfort them and may become even more agitated if you try to hold them. Parents are often equally frightened by the event, as it is disconcerting trying to decide why your child has awakened in such distress. Just like other familial traits, sleep disturbances (parasomnias) seem to run in families. A lot of work is being done to isolate genetic loci related to sleep habits.</p>
<p>Both nightmares and night terrors seem to be more frequent in children who have not had a good night&#8217;s sleep.</p>
<p>Try to have a regular bedtime routine, and limit television exposure prior to bedtime. Read books to your children about dreams and nightmares that incorporates their favorite characters in the same situation (one of our favorites was Franklin in the Dark, there was not a cuter turtle with a nightlight!).</p>
<p>Be creative and make a dream catcher to catch the bad dreams and keep them away, or discuss soothing images prior to bed. WE had &#8220;monster dust and wands &#8221; that our boys used to spray the room before bed and they all had a favorite night light (how they slept with three nightlights blazing was beyond me).</p>
<p>Our middle son was the most creative; he blew up an alligator pool toy that he placed outside his bedroom door each night. When asked what he was doing he replied, &#8220;my alligator will eat the monsters before they come into my room! How can a parent argue with that?</p>
<p>That&#8217;s your daily dose, we&#8217;ll chat again tomorrow.</p>

<p>Serves 6</p>
<p><strong>Dough:</strong></p>
<p>2 cups all-purpose flour</p>
<p>8 oz. unsalted butter (cold)</p>
<p>1/4 tsp. salt</p>
<p>2 TBSP sugar</p>
<p>1/2 cup milk</p>
<p><strong>Filling:</strong></p>
<p>6 large peaches</p>
<p>1 tsp. ground cinnamon</p>
<p>1/2 cup sliced almonds</p>
<p>1 TBSP sugar</p>
<p>1/2 oz. peach liquor</p>
<p>6 TBSP unsalted butter</p>
<p>3 TBSP brown sugar</p>
<p>1/4 cup melted butter</p>
<p><strong> </strong></p>
<p>Cube cold butter and place in the bowl of stand mixer with flour, salt and sugar. Using a dough hook, mix ingredients on low speed, cleaning down sides of bowl often.</p>
<p>Continue mixing until butter in incorporated and has a meal-like consistency. Slowly add milk to mixture when dough hook is turning.</p>
<p>Note: depending on relative humidity, all of the milk may not be needed for this recipe.</p>
<p>When a ball has formed, rub hands with flour and remove dough from mixer. Form dough into cylinder and wrap in plastic wrap. Place in refrigerator and allow to rest for 2 hours.</p>
<p>Wash peaches with cold water and dry. Slice peaches in half lengthwise and remove the pit. Place in a baking pan with skin up and roast at 350° until skin breaks away from pulp, approximately 15-20 minutes depending on ripeness. Allow to cool and remove skin. Slice peaches into wedges and reserve.</p>
<p>In a food processor, place butter, sugar, almonds, peach liquor and cinnamon. Mix using the pulse button and reserve.</p>
<p>Cut 6 pieces of dough 3/8 inch thick. Roll out on flour surface until 4-6 inch wide circles. Evenly fill each circle with roasted peaches. Top evenly with butter mixture. Fold remaining dough over to form a tart-like shell, remembering to leave the center exposed. Brush with butter and sprinkle brown sugar on top.</p>
<p>Bake 325° until golden brown. Serve with fresh whipped cream.<br />

&lt;p&gt;&lt;strong&gt;Dough:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;2 cups all-purpose flour&lt;/p&gt;
&lt;p&gt;8 oz. unsalted butter (cold)&lt;/p&gt;
&lt;p&gt;1/4 tsp. salt&lt;/p&gt;
&lt;p&gt;2 TBSP sugar&lt;/p&gt;
&lt;p&gt;1/2 cup milk&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Filling:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;6 large peaches&lt;/p&gt;
&lt;p&gt;1 tsp. ground cinnamon&lt;/p&gt;
&lt;p&gt;1/2 cup sliced almonds&lt;/p&gt;
&lt;p&gt;1 TBSP sugar&lt;/p&gt;
&lt;p&gt;1/2 oz. peach liquor&lt;/p&gt;
&lt;p&gt;6 TBSP unsalted butter&lt;/p&gt;
&lt;p&gt;3 TBSP brown sugar&lt;/p&gt;
&lt;p&gt;1/4 cup melted butter&lt;/p&gt;
&lt;p&gt;&lt;strong&gt; &lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;Cube cold butter and place in the bowl of stand mixer with flour, salt and sugar. Using a dough hook, mix ingredients on low speed, cleaning down sides of bowl often.&lt;/p&gt;
&lt;p&gt;Continue mixing until butter in incorporated and has a meal-like consistency. Slowly add milk to mixture when dough hook is turning.&lt;/p&gt;
&lt;p&gt;Note: depending on relative humidity, all of the milk may not be needed for this recipe.&lt;/p&gt;
&lt;p&gt;When a ball has formed, rub hands with flour and remove dough from mixer. Form dough into cylinder and wrap in plastic wrap. Place in refrigerator and allow to rest for 2 hours.&lt;/p&gt;
&lt;p&gt;Wash peaches with cold water and dry. Slice peaches in half lengthwise and remove the pit. Place in a baking pan with skin up and roast at 350° until skin breaks away from pulp, approximately 15-20 minutes depending on ripeness. Allow to cool and remove skin. Slice peaches into wedges and reserve.&lt;/p&gt;
&lt;p&gt;In a food processor, place butter, sugar, almonds, peach liquor and cinnamon. Mix using the pulse button and reserve.&lt;/p&gt;
&lt;p&gt;Cut 6 pieces of dough 3/8 inch thick. Roll out on flour surface until 4-6 inch wide circles. Evenly fill each circle with roasted peaches. Top evenly with butter mixture. Fold remaining dough over to form a tart-like shell, remembering to leave the center exposed. Brush with butter and sprinkle brown sugar on top.&lt;/p&gt;
&lt;p&gt;Bake 325° until golden brown. Serve with fresh whipped cream.&lt;br /&gt;

<p><strong>Serves 4</strong></p>
<p><strong> </strong></p>
<p>1 lb. fusili or orrichiette pasta</p>
<p>1 large zucchini</p>
<p>1 Portobello mushroom</p>
<p>2 medium roma tomatoes, rough chopped and reserved</p>
<p>1 cup fresh arugula</p>
<p>2 oz. extra virgin olive oil</p>
<p>1/4 cup shaved Parmesan cheese</p>
<p>2 large boneless chicken breasts</p>
<p>Salt and pepper to taste</p>
<p><strong> </strong></p>
<p>Rinse and dry zucchini, roma tomato and arugula and reserve. Cut zucchini into large slices and season with salt and pepper and reserve. Season mushroom with salt and pepper and drizzle with 1/2 oz. of olive oil and reserve. Clean and tear arugula in large pieces and reserve.</p>
<p>Bring to boil 2 quarts water in pot on stove or grill.</p>
<p>Place zucchini, mushroom on grill and cook 2-3 minutes per side until done. Remove and reserve.</p>
<p>Slice mushroom into long pieces and reserve.</p>
<p>Clean chicken breast and season with salt and pepper. Cook over high heat on grill for 3-4 minutes per side. When cooked, remove chicken breast and allow to rest on clean platter.</p>
<p>Cook pasta in boiling water with a pinch of salt and oil. When pasta is al dente remove from stove and drain.</p>
<p>Cut chicken into large chucks and place in a large kitchen bowl. Add drained pasta to bowl. Add remaining ingredients and toss. Re-season with salt and pepper if necessary.<br />
